Hier mein schnelles, gesundes und absolut leckeres Rezept für einen Spargel-Erdbeer-Salat - so bleibt am Wochenende noch genug Zeit für schöne Dinge wie Lesen, Crafting, Spaziergänge machen und Freunde treffen!
Ingredients / Zutaten
makes two portions / für zwei Personen
500 gr market fresh green asparagus / 500 marktfrischen grünen Spargel
a tub of strawberries / ein Töpfchen Erdbeeren
oil for frying / Mazola zum Braten
Greek Feta Cheese / Fetakäse
3 tbls. olive oil / 3 EL Olivenöl
2 tbls. Aceto balsamico / 2 EL Aceto balsamico
salt / Salz
pinch sugar / Prise Zucker
freshly ground black pepper / frisch gemahlener schwarzer Pfeffer
Wash, chop and fry asparagus until tender (about 7 minutes). While frying add a pinch of sugar - this will bring out the "sweetness" of the vegetable. Set aside and cool. Wash, dry and halve strawberries. Roughly chop up the feta cheese. In a large serving bowl whisk olive oil, salt, aceto balsamico. Add main ingredients and stir to coat. When serving add freshly ground black pepper. Enjoy with wholewheat toast!

Spargel waschen, in Stücke schneiden und mit Mazolaöl und einer Prise Zucker so lange braten bis er gar aber bissfest ist (ca. 7 Minuten). Abkühlen lassen. Erdbeeren waschen, trocknen und halbieren. Fetakäse grob hacken. In einer Salatschüssel Olivenöl, Salz und Aceto balsamico mit dem Schneebesen verrühren. Zutaten beifügen und mischen. Salat mit frisch gemahlenen schwarzen Pfeffer und Vollkorntoastscheiben servieren. Guten Appetit!
